We were excited to dine at Castor for the first time in a year. We chose to eat outside even though we’re in the middle of a heat advisory, but we were quite comfortable in the afternoon shade. We ended up being extremely disappointed with the service! I understand many businesses are struggling to fully staff up right now but last night was crazy! If you can’t provide timely service to the people already seated, stop letting in more people! Our sever was very pleasant and upbeat, but she was serving all the outside tables as well as many in the restaurant. She kept apologizing for the kitchen being backed up. It took over 45 minutes to get an appetizer and that was before the restaurant was even busy. One of the best restaurants in Corvallis, But we won’t be back any time soon.

Amazing southern American restaurant in Corvallis! Definitely give a credit for southern American restaurants, you can barely find any in Oregon. I love their food taste and drinks too, I think it’s actually better than most of the 3 $ signs restaurants. Service are nice but it can be long wait even tho you sit down. I visited here couple time and it average take you 2 hours to finish your meal.

What a delight to eat food from farms we are also shop with. The local fair was both familiar and delicious. It is a bit on the pricey side, and we did feel a smidge of a lack of attentiveness for the up scale feel they are going for. That said, the staff were very friendly and pleasant. We really like the atmosphere. And the location not directly on the busy main street was a real plus. The food is very delicious! The sous vide pork chop was tender and properly seared, but perhaps a little too big leaving a few bites a bit dry. The sauces are all to die for! Can't say enough about the difference that makes! The stake was very good as was the scallop app with another amazing sauce. With a rotating menu based on local fair, this will become a regular routine for us for sure!

My experience at Castor was very good! The food was cooked to perfection and the staff was very kind! I was able to enjoy a variety of dishes. The fries with the white truffle oil were amazing. I don't think I would change anything except having more uniform cuts on the fries. The beef fillet with grits and roasted vegetables were delicious and the beef was very tender. I think presentation was lacking just a bit but overall a wonderful dish The sous vide pork chop was the most tender and melt in your mouth pork chop I've ever had. They seared the pork chop after the sous vide, which locked in the flavor perfectly! The vegetables were amazing and had such a good flavor, especially when paired with the pork! The Chocolate Pot de Crème was made with espresso custard and coffee whipped creme. I personally think that it was a lot less viscous than a normal custard should be. That being said, the flavor was very good. The coffee whipped creme was a little light in flavor. The staff were very friendly, but there were some mistakes made. The one disappointment was the mix-up of another tables dinner. We were served other people's food which made the eating with family experience a little less inviting, but they fixed everything and brought out the right dishes to everyone after everything was figured out. Thank you all for a wonderful dinner!! Will definitely be back!
