I went in looking for a universal veggie/meat knife as I’m newer to the cooking game. Ryan was super patient and helpful. He had great suggestions and told me to consider my investment for a few days before coming back. He also answered all of my questions. Very classy, but not pretentious place. Highly recommend.

This place is so great! Surprisingly reasonable prices on excellent Japanese and French knives and the are SO NICE. Highly recommend the sharpening too - the setup is unsurpassed even when compared to professional knifemakers.

I received a second white cedar cutting board for Christmas from your shop. because of the staining on the first one i have, what is your opinion on sealing the cutting board with mineral oil prior to using it? Thank you, Luke

Hey there. Thanks for reaching out and I hope all is well. Given that the boards are not stabilized, they will stain (as you have experienced). You can recondition the board with a high grit sandpaper to reduce some of the staining and scratches. Oil is fine. The only thing that it will affect is somewhat reducing the action of the Hinokitiol oil in the wood, if you received an Aomori Hiba board. But it won't really negatively affect the board as a whole in actual use. If you received a kiriwood board, oil is fine since that wood doesn't contain any Hinokitiol. Please note that discoloration can still occur in well oiled boards. You would need to stabilize the whole board in some sort of resin or the like in a vacuum chamber to prevent discoloration, but that would defeat the purpose of getting a wooden board, and it would completely eliminate the function of the Hinokitiol in the Aomori Hiba boards.
