I have Premium AAA coverage. Am I covered for roadside assistance if I am driving someone else's car? Also, if I am a passenger in someone else's car, can i request assistance

Yes, your AAA is pretty much coverage for you in your vehicle or if you're a passenger as well.
I need to renew my licence. I currently have a licence from another state but have had a licence from Mass that exp.in2016. Can this be done at a AAA or do i need to to go to the RMV.

You should be able to get the forms online and fill them out. Go to mass.gov/rmv.
I am looking to make an appointment to transfer vanity plates from my trade-in motorcycle to my new one. I can't seem to locate this?

They take all major credit cards, cash or check. It doesn't matter if you are utilizing their registry services for AAA members or to become a member of their toad services. Hope this helps!
