I'd also recommend the bean thread noodles for a gluten-free option.
It comes with spy by default But they will make a fresh batch with fresh equipment without spy, if you let them k now. They same is true with most of their stir fried dishes and phad see ew and pad Thai. But their curries cannot be made gluten free
