Does anybody truly know what white cheese they use for tacos and cheese quesadilla at these locations? I love the cheese but every time I ask no one knows what it is... And no this is not Monterey jack.

I do not think it is Queso. Queso is generally used for melted dips. Queso Fresco is a super fresh crumbly cheese that doesn't really melt... Their cheese for tacos is really rich, super melty. I'm a cheese fantic I've tried most cheeses at most stores and I just can't match it up..
