Ippolito's can offer an eggplant parmesan not egg dipped and fried in a pan instead of in the oil that has had egg and other meats. Substitute sauteed zucchini, broccoli or other vegetable of choice for the pasta. Richard is right, both sauces are vegan and can be an option to pair with this dish. Make sure to choose the balsamic vinaigrette for your salad, the house contains Romano cheese.

The bread without cheese is vegan. I believe all pastas have egg. Marinara and tomatoe sauces are vegan.
