I was there on a Saturday, 7 AM in January and watched the doors open to three people. After breakfast, we went to the Lodge Tour about 9:30 AM. As we left the Lodge about 10:30, that parking area was getting packed and decided to go to through The Tallgrass Prairie and see the buffalo to avoid the lunch crowd. Driving back to The Merc about 3 pm. we joined a line for lunch. It was still a madhouse at 4 pm. We were told it's like that any day for lunch. Go early or go late. BTW, the line moves quickly, there are benches and big heaters on the sidewalk, although the Oklahoma sunshine kept it in the 50s that day. The staff tries hard to please, and you will meet good folks from around the country. Worth the visit!
I've been 2x. Once last April and then again in June. The April visit Was on a Friday. Got up early and was there about 8:15. No waiting. However by the time we finished..it was lining up! The June visit Was a Wednesday and we got there around 9 or so and had about a 30 minute wait...maybe less. And again was packed by the time we finished. Line was always steady! But, worth the wait!
Just get there early.
I went on a Wednesday evening and there was still a line for the restaurant but it wasn't too long.
I don't think there are slow days, but times. Go early. You get seated without a wait and enjoy your meal.
