When it comes to the butcher shops Wagyu Ribeyes. Why do they trim the rib cap off? It’s the best part, and in competition cooking. That’s the part the judges eat. Very disappointing that they remove it.

Call ahead and order one that's not trimmed. They can do that. I love the fat as well. It really is useful in the cooking process 👍
