If you immediately let the wait staff know you they should offer a replacement dish and then ask if there is anything else they can do. Different customers will need different things to feel satisfied. Some will be happy with an apology and replacement, while others will need to have the meal for free.

If you point it out and choose not to have a replacement, of course you shouldn't have to pay for it. However, if they offer a replacement and you eat it, of course you should have to pay for it.
