It's cured in sugar and salt and should have some maple syrup. It's pretty big in the Pacific NW.
I was watching WGN and that's where I heard about Salmon Candy but I did not see how they made the Salmon Candy on WGN's Around Town this morning. Sure, I imagine Brown Sugar is involved but I am pretty sure there's more to it than just that.
Not sure about the brown sugar rub but it is smoked and it was featured on WGN this morning with Anna Belival.
