Heywood's can custom make you most any type of sausage desired, beef, lamb, pork, duck. They have their own recipes and would also likely make to order. Ask Patrick, he is a CIS trained master chef. The entire staff is superb. They are primarily wholesale but have limited public hours.
I can't speak for them, but I can say they have a wide variety of sausages that seem to rotate based on what their restaurant customers would order. For what it is worth, I would try a pack of Lebanese sausage.
