If they run out for the day, they won't cook anymore. I *have* seen them turn away business. My guess is you'd probably wanna give them a couple days notice.
We smoke all of our meats based on an average number sold per day of the week, how many we need for the day's catering orders, etc. We will always prepare enough meats if your request is placed in advance. We will never "turn away business" but may sell out if a particular day brings more orders that we estimated~ we do not want to serve leftover smoked meats.
