You are right Jerrod the majority of their regular guests suggest the next country to be featured. Menu is posted every Monday on their page. But for sure it will be something unique.
There's not a schedule. From what that staff has said, they decide a week before on what next weeks country is. Check out their FB for the menu posted usually every Monday.
