Mostly just the indoor vendors are open. Much better on weekends.
Not as busy as the weekend, so it depends on what you're going for.

Not so much fun but it's still ok best time is the weekend of your looking for entertainment
Touristy. Not as busy and only 25 to 30 percent chance of entertainment. Beer and margaritas still cold and food (all indoors) still pretty good.
