If there are no gluten options available you can order sashimi instead which is just slices of fish of your choice and supplement with a salad.

You can probably ask if they have gluten free soy sauce. Most Asian places carry it now. And they offer a ride range of gluten free items, like fish, veggies, etc. You can request rhe hibachi to be cooked with GF soy if they have it, or to be cooked without soy sauce.

Soy sauce is obviously not soy free but they do offer strictly veg and protein meals. Sushi is by definition gluttonous rice.
