They are constantly restocking, but like most places if it is a high volume or in demand item it may seem like less of it is there, if there's a rush or sudden change in consumer buying habit (ie climate change, something they want now, etc.)

They tend to get stuff in every day. It is a high volume operation, so the inventory tends to turn quickly. I would not shop fish on Monday, but I think that is true for most places.
I was there on Saturday during the rush and they were restocking as stuff was coming off the shelves. I think you should be safe. Hope this helps!
