Brick Oven... NOT A "Regular" Oven. They cook it on the stone. I think J Norville is mistaking a Wood Fire Oven as a Brick Oven.

The different types of ovens are, 1. Brick: the oven is operated by either coal or wood fire (rarely see them anymore). Today you would typically see a facade that offers the appearance of a brick oven but is operated with gas. Sometimes the pizzeria may add wood inside in order to have the essence of a true brick oven (wood burning). 2. Gas oven: Almost every pizzeria today operates with a gas oven. 3. You may find other types, it’s rare. This establishment operates with a gas oven. The difference from any other pizzeria is the ownership started in the 1950’s in Richmond hill, Queens, New York. 3 generations later still operated by the same family.
