I dont know their exact answer, but generally downtown Newark/the central business district doesnt currently have enough residents to sustain late night hours and full weekend hours at all the restaurants available. During the standard work week there are far more potential patrons given the businesses and universities in the area. Especially for a smaller staff, dedicating the time for longer hours during the week makes more sense and is more economically responsible than spending hours for a much much slower crowd on the weekend. It also promotes a much stronger work life balance for the owners and staff which is important when we want to continue to promote local establishments.
On Halsey Street, there is little pedestrian traffic on the weekend. The restaurants on Market street and Edison Place attract the crowds attending Prudential and NJPAC events on the weekend.
Most of the specialty restaurants close early on Sat and are closed on Sun. I guess it's due to there is not a lot of customers who come in on the weekend. The location doesn't help either because it's a walk away from the heart of downtown Newark.
