Do you ever clean the black burned pizza dough off your pizza oven? I have stopped eating it because every time I’ve had a pizza there is burnt pizza dough stuck to the bottom of your pizzas. Used to be great! What happened?

We do put our pizza's directly on the oven deck and not on a screen. We do have a brush that our cooks use; however when our volume is very high it sometimes creates a situation that makes it a bit difficult to brush out completely or as often as they should. We will be sure to address this concern with our cooks. We wish we had room for another large pizza oven; as this would make that problem easier to solve, but we just do not have the room to add one.
