They only have the carts on the weekends (and some holidays), but many dishes are available all week

You can order any dim sum item at anytime, it doesn't have to be on the menu. In fact, they make many Chinese dishes that aren't on the menu. Just ask and see if the chef can make it.
There is menu based orders, but Sunday brunch is the full (select from the cart rolling by) experience.
Everyday. But I think there are more options on the weekend.
