Honestly best bet call and ask. Usually the owner Carlos or his son's answer the phone. They could give you the correct information.
Well I went in and asked for pork belly as I was doing a suturing class. The gentleman there said this is good and fresh. . I did not tell him I was using this for a class. I picked it up on Thursday in the class was on Saturday. I kept it for two days in my refrigerator. After I took it with me and taught the class late morning there was a bad odor coming from the pork belly. So I don't feel that it was fresh and I was something that it wasn't. I would be very careful and look and smell at the product prior to purchasing it. This was just my experience. I'm not sure if this is in fact the case all the time.
