Have no idea of what non gluten items are available.
Not in bakery. But outside where bread is some bread. Also in soups and to make cakes and stuff. Haven't seen gluten in ready made. Like from bakery. But they do have some sugar free items
Anything not made with wheat, barley, rye or oats. I doubt the bakery has fallen into this fad

I'm not familiar with those. The pastries at HEB...and most other places...tend to be pretty glutinous.
They have donuts (maple - my favorite, and powdered). I think they have waffles, as well. Not a pastry, but... It's all frozen and fairly limited, but those donuts are to die for.
I don't know about that.
