There are many olive oils you can buy, for sure what it is being used for those appetizers is Extra Virgin Olive Oil ,usually from Italy (best from Liguria, Puglia or Toscana) also Greek olive oil is very good, knowing Leonardo which likes to support local product he might use California olive oil for sure from small artisanal family friends of his.

Olive oil. You can find different kinds in the store. Just make sure it's a dipping oil. Pair it with a good modena balsamic vinegar and fresh bread. Wonderful start to dinner.
