I work there, our flour is not gluten free. If it was, we wouldn't be able to stretch the dough the same ( ie, no tossing it in the air, no spins). the gluten in our dough is what makes it so stretchy and holds it together
No they do not the dough is actually made from a very high content gluten flour.
They use a gluten-free flour and their dough is homemade. I have a severe gluten intolerance and I have had their Pizza. I do not have any reactions when eating their food.
