I recently bought Suarez Colombia and Hacienda La Papaya Ecuador coffee online. I am used to Peet's dark roasted coffees. I find your coffee has a "sour" taste.With a pour over, what water temperature do you recommend?

I don't work there but I have been doing pour overs for a long time. The ideal temperature is around 200°F during the first pour. If you think it's too much hassle to measure it, a good rule of thumb is to begin pouring 30 seconds after your kettle boils.

Also be aware of your grind size while doing your pour over. Over or under extracting can lead to unpleasant notes!
