Their interpretation of Thanksgiving is probably believing it is a day to be thankful where most people believe it is a day about turkey.
Thanksgiving is generally celebrated as a day to give thanks and spend time with family and friends. Vegans are people, too, and the hard working folks at Strong Hearts have as much a right as anyone to take the day off and partake in the holiday.

Because being thankful has nothing to do with what you choose to eat.
On Thanksgiving, humans are most drawn to the flesh of the animal. That's the origin of the holiday, as I'm sure you know. Most vegans, like myself, struggle on this day as the primal, animal instincts to bake a turkey emerge. It's not a safe day to leave the house, really. Many of us need to create a safe controlled environment to get through it.

Well I'm not sure that being thankful equals turkey.
Well, I'm in no way affiliated with Strong Hearts, but I imagine it's because the holiday itself needn't be about the food, as much as it has been ingrained into the tradition. For instance, I do a number of "Friendsgiving" dinners every year wiith at least one of them being entirely vegan, revolving the holiday around thanks for the good people in our lives instead of the food.
