I'm not an expert on Cuban food or a gluten-free diet, but many, if not most of the items on the menu would qualify as gluten-free even if not explicitly stated as such on the menu. Since Cuban food has a lot of rice, beans, meat and fish (had to do a quick google search here to make sure I'm correct) that's what their menu largely entails. They don't use canned beans but natural dried ones. Their paella is amazing, even the vegetarian one.
