They won't have king cakes pre-made without cinnamon. But I'm pretty sure that you can special order one without. Tastee Donuts sells king cakes without cinnamon, it's their donut recipe shaped and decorated just like a medium sized king cake.
I do not know, but i don't see why not. Just call a backer of you choice and ask.
