I suppose you could freeze the sausage and ship it with dry ice overnight. My father-in-law moved to Arizona, too and would ask us to bring him the gardinera and salami when we went out to visit him.
They have them frozen and vacuum sealed. You can overnight them with ample newspaper insulation. I've done it to the West coast many times. Works great!
