They ask what level of cooked you want. Though I'd imagine well done is not going to be as plentiful. Definitely worth it regardless though.

All of there meats are well done, unless you do prefer something different and they'll send them over. My favorite was the salmon.
I'd be surprised if they offer well done meats off the "swords", I eat rare or medium rare, and I've never seen anything I'd consider more than medium well. On the other hand there's lots of chicken and pork and sausage where that's irrelevant.
