I know the building won't be open on a Sunday, but are the grounds open then?

We were able to visit the grounds on Sunday

Its only open until 6pm on Saturday, Sundays and Mondays for the grounds!

The grounds typically are open to walk around on sunday.

I'm not sure - i went once and they were, and another time when they were not. Best bet is to call the temple and ask!
