Well I work at a restaurant that deals with shrimp and proper cleaning them and by the way they look there it looks like they do devein the shrimp.
Only the raw Aguachile shrimp is deveined. Cooked shrimp is not. Also the Tostadas raw shrimp isnt. You may ask them to use deveined shrimp. Just know it will not be cooked. Itll be raw. Hardly to no restaurant deveins all their shrimp. If youre so worried about "poop"in your shrimp, dont eat seafood in restaurants. Just make it at home.
I went there the boiled shrimp are not cleaned because they are head on. Any shrimp in a dish other then that are cleaned from what we saw.
