Because the kitchen staff needs time to clean kitchen closes but you you can finish your meal and drinks and enjoy the rest of that time
So they can close the kitchen...which is a ton of work. And be able properly breakdown and clean the kitchen line
Prep time starts early each day. Closing takes as long as it takes but by that time of course folk want to go home. So they try to streamline closing as much as possible.
