Yes, Fuji Ultimate Sushi has plenty of gluten free options. Sashimi is probably my favorite since it's also naturally low carb.
Not many options, I'm afraid. They use tempura on the shrimp and crab most of the time. The veggies from the kitchen have a soy/teriyaki-ish flavor to them. You would be limited to about 10% of the menu. And that's only if they have a second area that's sterile for the GF options.
