They grill the rolls before they add the lobster and mayo, and I think they are buttered hot first, but am not absolutely certain. I do recall that the lobster is plentiful, very fresh, and truly delicious. Doug's is not fancy, but the food is first-rate.
Yes they do very good and also they have lobster bisque

This is the best so far in our area. Wonderful lobster rolls and other great food as well if you do not eat seafood.
They have several lobster dishes...All are amazing, tasty and hardy porions. A great little seafood restaurant... You will be pleased. 😉
