Estela, has to do with the number of employees they have during shifts. Both the waiters and those who clean the tables, as the cooks. This place is typically like that. The worst hours are for breakfast on the weekends. If you are very hungry and limited in time, you do not want to go there.
If they don't have enough staff, why build something so big, in my opinion, the capacity is great and the inability of the owners is disastrous.
Norms is very strict about not overloading the number of people their servers ha e to serve at one time. They also have to seat you at an appropriate moment, ha e your menus given to you, have the waiter ask if you're ready/get you started, have the order go to the kitchen, etc. If someone messes up the timing in any part too many times, that person will have to go on probation and work a WHOLE shift WITHOUT pay. They can fill up the whole restaurant even when 70% of the place is empty
