Ticketmaster is currently showing tickets available for Max Weinberg on Thursday night, but only 2 at a table of 4. My question is if we buy two tickets will someone be sitting in the other two seats?

If they're selling you 2 tickets there should not be anyone else sitting with you no. I've been there twice since this all started (and I'm VERY cautious) and it's probably the safest I've felt. If I were you I'd call just to be sure, but all of the tables seat 4 or 6, but they've been selling them as 2, 4 or 6. My mom and I sat just the two of us last week...no problems! Tables are also very far apart and they are really good about enforcing safety policies!
