I would like to plan a boat trip from your marina to Fort Meyers have lunch and return. There would be 6 people aboard we are experienced boaters and think a pontoon would work well for us, is this possible

I think it is possible. I went with 7 people, all of us 100% NOT experienced and we had a great time. We didn't go that far but I don't think there's much of a difference as long as you plan your time well.
