Do they boil and bake their own bagels?

I don't believe so. I believe the bagels are from a local (New England) bakery that keeps them stocked. The bagels themselves are fantastic.

They steam and bake their own. Steamed not as good as boiled.

I've seen them walk out with hot trays, so maybe they reheat or bake them there? Not sure, but the are delicious.
