Green tomatillo sauce isn't very spicy. Its a got a tanginess to it. Chipotle is a smoked jalapeño. It's spicier than the tomatillo. A great sauce to try if you like milder flavors is the mole. It's a blend of spices, nuts, and chocolate that makes an amazingly deep flavored sauce. Honestly though, most things on their menu arent super spicy, mostly just flavorful.
I dont know the difference between the sauces but there is many options on the menu that are not spicy
