They use kielbasa sausage. It is a Polish sausage.

I haven't tried it myself, so I can't answer. I known the owner and I can assure you, very proud of what he serves. So it should be good.

Sorry, I haven't had their boudin. But, they are extremely proud of their heritage. Imposter is not in their vocabulary...
