Bob's Red Mill is my 1st choice because of price, quality and availability. And, for a simple, ready-to-go bread, Udi's brand is 1 of the best in my opinion. I made a loaf of garlic bread from their frozen baguettes and NO ONE could tell that it was gluten free and had been previously frozen! Everyone attending the meal was shocked when I told them it was gluten free. So, I will only buy Udi's brand bread. Hope this info helps!

I use Cassava flour for a replacement in most recipes. Bobs Red Mill 1:1 is another good one. I find Rice flour tends to make things gooey
I don't bake. Unfortunately, I don't know. I purchase millet, gluten free bread every week at Mother Earth Natural Foods. There is 10% off on Saturdays at the one in N.Ft. Myers. Millet bread is a favorite gluten free bread at all of the markets including Publix and Aldi's.
