Christmas is the best weather season in Disney I visited the park for every holiday. It averages between 70 and 85. 85 would be a very hot day but the humidity isn't bad. Stay away during may through October its brutal.
When I went a few years ago they had 'Holidays around the World' all around World Showcase. Each country had a different featured food item or drink featured. I absolutely loved it! As for the weather, it really depends. It's always a great idea to pack in anticipation for any weather. Though Florida is typically warm in comparison to other parts of the country, having a sweatshirt and pants in the event that it is a chilly day is always a smart move. If you're staying at a resort on property, turn on the TV in the morning and they have the weather listed on the top of the main channel (the channel scrolls different activities going on throughout the day at different places).
