Most rides are open, but not the shows. Use the app. Plan ahead because not all parks are open on all days and you need an advance reservation in addition to your ticket.
Definitely get the app. It will tell you all. But beware that some rides have a "delayed opening" as they call it, seemingly every day. That can be a few minutes to a few hours. So you can run to get in the busiest ride first but then they'll tell you to come back later
The best way to figure that out is to download the Disney Parks app and check in real time!
Non really the only things not fully open are the live shows and character meet and greets but they have altered versions of distanced photo ops with the characters instead

Was just there the rides are open but most shows and fireworks are currently not being offered. As most people have already mentioned, get the app it will let you know what is available and wait times. Also most restaurants require you to use mobile order.
Yes, you'll do best if you read and do your research online. I noticed when I went to magic kingdom last week that splash mountain opened about 30 minutes late (right when I got there) and mine train was (unfortunately) closed the time I was there (I left for epcot at 2pm). Maybe some of the delays are to control the crowds so ppl dont run to those rides in the morning. But the mine train delay was so long, that was probably an issue with the ride. Good luck! If you get there in the morning, you should have enough time to do everything in the park. Though lines at Hollywood studios are very long in the morning and tend to be better at night ( when all the day guests have left).
