If you plan on living near the ocean salt will be a concern, but humidity is your biggest issue but for the most part i keep all my wood stock equipment in the garage its cool an dry no real issue unless your doing finishes check the forcast pick the best day.

The specific location in Florida will have a significant impact to the answers to your questions. But if your shop will be temperature-controlled, it will also be humidity-controlled. Humidity where I am, in Central Florida, is a concern whenever I perform any type of wood work outdoors. I'm taking advantage now of the relatively dry spring weather (humidity in the 30-40% range) to apply lacquer to an ash guitar body. I do so in my garage (ventilated), but I wouldn't attempt this in the summer months when humidity is almost a constant 100%.
