Yes, all fōnuts are baked, never fried. And as of this week all fōnuts are gluten free, with many vegan options.
All gluten-free doughnuts are baked. Some are vegan, but it's understandable because some excellent vegan desserts happen to be gluten-free due to using nut flours and such. Plus if the gluten-free doughnuts were fried in the same oil as regular doughnuts, it would cause cross contamination. I don't imagine it would make much sense to have two isolated and independent friers going.
