Kimchi is always refrigerated at HMART like lee said it is aged and fermented so it's never technically fresh it lasts for a long time
Not sure. It's usually in the refrigerated kimchi section, and I assumed it's rotated like any other stock. Besides, kimchi is aged anyway. So, not sure why you would want "fresh" kimchi.
