You can download the official Disneyland app for Android or iOS and view the entire list for either park, height requirements, and wait times as well as descriptions. Off the top of my head, there are approximately 20 rides currently in operation.
Google says at least 21. Not sure if that's updated with the new Star Wars Galaxy's Edge.
