Hello I have a question you guys, do the catering normally do buffet style or serving single dishes on trays?

They do both, but the last catered event I attended was terrible. The event was great, the food was not, the coffee cream was spoiled and curdled.

I've been to events with both. I believe it would be up to the event host and the event budget to decide which best suits the event
