As Randi posted, the residents order from a menu, just like a restaurant. The food is then prepared by the Chef/Sous Chef. There are daily specials and menu attention put towards special events, religious and holidays events. It's not mass produced and is very good.
It is fairly fresh and it is cooked to order. There are waitrsses and a chef that will typically take special requests. Its just like a restaurant. Most of the time, it seems fresh and giod quality.
